Hello all I thought I would share this recipe we were given whilst visiting a lovely cafe in Norfolk. (Walshingham)

I had a piece of the cake and liked it so much I asked for another to take away.
Whilst chatting to the lady she offered us a copy of her recipe. So below is what she gave us.

Ingredients
· 12oz Plain Flour
· 12oz Currants
· 6oz Margarine
· 6oz Caster Sugar
· 2 Eggs
· 2 Tablespoons Of Sherry
· 2 Tablespoons Of Cream
· 1&1/2 Teaspoons Of Nutmeg

Mix all dry Ingredients together.
Add the eggs cream and sherry and mix well.
Line a baking tin/tray with baking Parchment add mixture and bake in oven at 160 degrees for about 45 minutes.
Remove when cooked and dredge with caster sugar.

My wife often makes one of these to take with us now when we are away with the van. It's great with a brew in the afternoon. (Well anytime really)

My wife is a coeliac so she varies the recipe using different flour to make the cake gluten free, she also uses butter rather than margarine and doesn't bother with dredging with sugar. However I have written the recipe just as the lady in the cafe explained it.
