I drive past Brugge almost every week on my way to work in Rotterdam.
We had a look at the coastal sites a few years ago - from the French border to Zeebrugge - and they are all exactly what you would expect - aimed at the young family market - facilities are a bit variable, pitches a bit small, etc.
Camping Memling is an all year site and quite good - the facilities are roughly between C&CC and CC standards.
Camping Klein Stand has the attraction of a water park in the camping grounds - so it's certainly aimed at the young family market.
Brugge - drive to the massive underground car park on the southern edge of the town (near the railway bridge) and walk into town. Food is quite good - nothing wrong with quality or presentation but I've marked it down for the higher prices charged for eating on the city square - but you should do this anyway.
A more authentic experience - try the small town of Damme about 10 km North East of Brugge - very popular with the locals - great restaurants and really good beer.
Anything else? This region speaks Vlaams - as I'm sure you know as you mentioned Brugge not Bruges - so if you don't already you may want to learn a few Dutch words like "Dank U" (Thank you), "Austublieft" (Please) and of course "biertje" - the first one is easy but you'll need the second to attract a waiter for a beer - try one of the learning Dutch language web-sites for spoken examples.
