Melton Mowbery Pork Pie - Recipe

Hi, Can anyone tell me how to make a Melton Mowebry Pork Pie.

I have a rough idea on how to go about it and i have made my own Pork Pie wooden dollies for doing the pies side walls.

What is the best meats to use etc.

Any help grately appreciated.

Uhh, umm, just the very thought of a Melton Mowbray pie gets me salivating. I was brought up just around the corner from what was Walkers the Pork Butchers, now morphed into Linekers pension fund! If yours don't turn out too well go to Dickinson and Moriss theirs are ace. And don't forget the Long Clawson Stilton to accompany it.

Theres actually about four outlets in Melton Mowbray that bake pork pies, Dicko's which is the 'Ye Old Pork Pie ,a couple of Butchers shops and a specialist Pie shop in King street, for my personal preference I prefare Walkers which we normally buy in Leicester, the shop is near the fruit and veg market off Highcross, I suppose Pork Pie making is a bit of a black art with everyone having there own recipes and textures and claiming that theirs is the best, :)

Then Auspom could be lucky because several years ago one of the bakers from Dickinson and Morris moved to Aus and set up business making MM pork pies, if he did a search of Aus pork pie makers he might com up trumps,

The one's you buy from the shop are hand made, it fact they make one covered with Stilton Cheese, if you don't mind the calories, :)

Meltom Mowbray pork pies have PGi status so can only be made in the Melton Mowbray area.

The really are simple:
Hot water crust pastry
Chopped pork (not ham and not minced!), shoulder is fine, seasoned with salt & pepper.
Pork stock and gelatine to make the jelly.

Make your case, idealy hand raised round a dolly or jam jar
fill with the pork,
top and crimp,
bake (about 2hrs at 180c), remove from oven and cool,
make two holes in the top pour in the freshly made jelly and refrigerate

There's a Melton Mowbray in Australia actually Tasmania so I suppose you bake your Pork Pie over there and still call it a Melton Mowbray pork pie, :)

— to the North, by the A52 from the M1 and the A1 and including the city of
Nottingham,

Grantham and Stamford,
— to the West, by the M1 from the A52 to the A45,
— to the South, by by the A45 and A605 from the M1 to the A1 and including the town of
— Northampton.

Not quite sure Northampton is any where near Melton Mowbray!!

Another bit of trivia ..... the saying "paint the town red" originates from Melton Mowbray. :cheer:

Ah but after March 2019 it may well be that we get Melton Mowbray pork pies from Tasmania. But after the last 12 months fiasco's anything possible. :(

Thanks all for the replies.

Camel........You are spot on as Tony Wensley who was the masterbaker at Dickson & Moriss has started his own business here on the Gold Coast Wensleys fine foods doing the pies pasties eccles cakes and all types of sausages.

I have made some pies to the recipe and they were great, brought back memories of home.

Just got to fine tune the pastry & the seasoning but i suppose practice makes perfect.

Now that's something I can't resist, but don't see them in the shops very often. :)

Also, being born and bred in Wiltshire I don't see nice oozing Lardy cakes any more that were common when I was young. :( Used to pass the pie shop going to and from school.

brocklebys. on the roundabout on the way to Ashfordy near the grange A6006 makes authentic Melton pork pies with a excellent local reputation .also at upper or lower broughton always forget which is which but the local butcher is there also makes excellent pork pies i believe he has won numerous awards..

After all this talk of pork pies my wife proudly presented me with a D&M pie last night. Absolutely delicious. Must check out my family tree some time as my mother hailed from near Melton Mowbray and her maiden name was Dickinson. I may be heir to a pork pie fortune!

These days Dickinson&Morris are part of the Samworth group (Ginsters Pasties etc), but when it was still locally owned one of the partners was my mates wifes father, that is why I would do well in a pub quiz answering questions on Dicko's pies, my mates favorite subject down the local 'Pork bloody pies', :)
