To get a "feel" for the maximum limits:
From the VIN plate subtract the GVW from the GTW [or GVM from GTM]
Which will indicate what it could tow, far from the same as what it "should" tow in terms of a caravan.
Look at the tow bar for its "S" value, that indicates what the towbar can take as a maximum noseweight; again that is not necessarily what the vehicle can take as its maximum as the bar might be more widely used other than your vehicle..

Tiguans in general have a good reputation as tow cars. The model you are looking at apparently has a "weight" of 1700kg. Parkers do not specify if this is kerbweight or not.

It also has a maximum towed weight allowance of 2000kg. However the conventional advice for towing a caravan is that the MTPLM should not exceed 100% of the cars weight, but novices should not initially tow more than 85% of cars kerb weight. This suggests a caravan with an MTPLM of only 1445kg rising to 1700kg as experience is gained.

This advice is only advice and varying by a few percent is not likely to cause a problem.

Do read up about sensible loading to control both noseload, and to limit end loading.

(added by edit) I should also point out that a good match will only be good provided the mechanical condition of both the tow car and the trailer have been maintained, and driven sensibly. to much speed is the biggest single factor that contributes to instability.

To the OP, do as JTQ suggests and calculate the rated weights. On a Tig the 'plate' (actually a sticker) will probably be on the nearside front door rear (i.e. .B' ) pillar or may be on the drivers side in the same place. Subtract the smaller of the top two figures from the larger to get the maximum towing weight and then check that against the V5.

We had a B6 Passat Estate on the 2L 140 TDi CR engine and that was rated 1800Kg. Then we had a B7 with the same engine and BlueMotion and that was rated 1825Kg. According to the VW web site this car was rated 2200Kg maximum tow - yes the AllRoad is but not ours! We now have a B8 2L 150 TDi GT which is also 1825Kg but was shown on the V5 as 1850Kg. It seems that VW went through a phase in early 2018 when the wrong 'plates' were fitted in the factory and they even issued a mandatory recall on it - but it took the local dealer two weeks to find it in an old engineering bulletin. On our car a dealer had fitted the corrected plate but had not had the V5 updated. Got it sorted eventually but it took some doing!

Also to the OP, if you are having a towbar fitted make sure you write on the works order or jobsheet that it MUST have fridge wiring fitted so that it becomes a Condition of Contract. By default the installation kit (if it is Westfalia or Thule) does not come with fridge wiring - that costs an extra £100. It does not usually come on a factory-fitted version either - so SPECIFY. A dealer will charge best part of a grand to supply and fit the towbar (probably by an outside contractor) and have the engine management unit software updated to handle it: I took mine (all three actually) to a specialist towbar installer who did it for £540 on the first two and £600 on the latest all in and guaranteed - this in the Leeds area.
