Hi Matt, welcome to the forum.
A good piece of advice we can give you, is to take a notebook with you as you view potential caravans and jot down personal plus & minus things as you view. You'll be amazed at the things you forget when you get home and discuss all the vans you've looked in that day and will find your notebook handy to refer to.
Each one of us has different needs and preferences when it comes to interiors, so take your time and one day you'll view a caravan that feels 'just right'. When you think you've found the one, imagine living in it from when you wake in the morning to when you go to bed at night. Stand in the shower with the door closed to find if it's big enough for you , lay on the bed, check if there's enough cupboard space, etc., etc.,
We've found that it helps if the fridge doesn't vent into the side where an awning would go, as awnings can get extremely hot when you're away in the summer, and makes the fridge work harder to keep everything cold, so a fridge that's on the opposite side to the awning is a plus for us.
We also find an island bed, which you don't have to make up late every night, is perfect for being able to get all around to make. If one of you gets up in the night, it doesn't disturb the other person as the person getting out of a side off-set bed would. Usually, though, the seating at the other end is slightly shorter. Lots of things to be considered and it's always a compromise somewhere!
Good luck in your hunt
