We've stayed at Les Tours several years ago(I presume you mean at St Amans Des Cots. It's a pleasant site, nice pool, clean facilities - bar was underoccupied when we were there, didn't use the restaurant. Its a long way from anywhere, so stock up on food - although the butcher in the village is excellent. I've not heard anyone else who's been there.
See the Truyere gorges, Entraygues, and Estaing, visit Laguiole and see all the steak knives being manufactured, have a walk around the lake, use the canoes, pedaloes, etc. If you want a longer trip out then do the Tarn gorges, or go to see the vultures in the Gorges de la Jonte. Visit Sauveterre La Rouerge for a lovely bastide, and Conques if you have chance.
Have a great holiday.
