have a Maxol Monte Carlo 2000 in a 1990 Swift. I can not always get the oven to stay alight when I release the knob. When it does stay alight it does not get hot enough toeven keep food warm let alone cook. The oven is in outstanding condition and the rack is still shiny silver. I think it has had very, very little use. Does anyone know what can be done to fix it?

It's most likely the flame failure device, assuming one is fitted to your oven, and their purpose is to turn off the gas if the flame goes out.

They look like a small copper pipe that sticks into the flame, and over a period of time the flame corrodes the metal pipe and they fail.

A qualified gas engineer should be able to fix this for you.
