hi Caro,
you can remove everthing exept the uprights " toilet compartment kitchen side, floor to ceiling ect" as these are required to keep the body stable and ridgid, everything else bunks cupboards ect can be taken out (but carefully) because as John said they are built in,
you have to understand how the van was made before dismantling, and find out where the internal wall struts are,
when old vans were made the base was fitted to the chassis and then the frame built onto that, the internal walls were next, followed by the cupboards, bunks ect, screwed to the frame from the "outside" then the insulation and finally the outer skin,
in order to remove something the screws have to be cut from the inner skin to the unit, as it is a nightmare to remove and replace the outer skin to get at the screws, once an item is removed mark the walls where the frame struts are (for reassembly) and use glue like no nails to stick it to the wall and then screw the unit to the frame,
I would also suggest that you only do half the van (front first and then the back) as this keeps every thing square and ridgid,
it is well possible to revamp or repair an old van in this way as it has been done many times before,
