Welcome to the forum.
As far as the electrics go with only one socket on the tow vehicle you can only run the caravan running lights.
Even if you plug a 7 to 13 pin adaptor in and then try taking two 7 pin outlets you will still only have running lights.
Your best bet is to have the towcar wiring upgraded to 13 pin socket with the extra wiring required to do it and convert the van to 13 pin plug or just get a grey (12S) socket fitted to the towcar and use the existing caravan plugs.

Yes you will need a relay to operate the fridge, but a good auto electrician will sort that out for you.

beat me to it Damian

hi Savory05, welcome to the forum,
in a word No sorry it will not work the single 7pin socket on the car is for road lights only converting to 13pin via a adapter will still only power the road lights, these adapters are so that one can power the road lights on a trailer with a 13pin plug from a tow vehicle that has only a black 7pin socket and thats all. you cannot get any secondary power "to the grey plug wire" any other way than having either a grey socket fitted to the car inc relays, or converting the car to 13pin.
this is because there is no perminant live feed wire in the road "black" plug.
it does not mean you cannot tow the van though with just a black 7pin plug you can as this makes the road lights work it just means you will not have the ability to charge the van battery and fridge. plug in the black one as normal leave the grey one disconnected.
