I’ve 1999 Bailey majestic pageant 2 berth and I’ve yet to discover the water heater switch and how to use it. Any help would be appreciated. Is it located under one of the seats? How do you turn it on to either electric or gas?

Welcome to the forum.
As your caravan is dated 1999, it could have either a Carver Cascade 2GE, or a Truma Ultrastore. Either model would be fitted on the offside just in front of the wheel arch.
The Carver has an almost 25cm x 25cm square external flue, and you can find a set of typical instructions for it here:-
If its a Ultrastore it will have an external flue that looks like this
