VAG 1.4 140ps (Tiguan/Kodiaq) for towing ?

Possibly the point on the engine choice here is just what performance you expect from the engine. I would not have gone for a140 as I cannot see it being up to my expectations, but others may ask less from the tow car and accept what I would reject.

I read somewhere recently that VAG have dropped the 190bhp diesel, leaving just the 150 and the 256 bi-turbo.

I think my reading is right as if you go look on the used VW web site if you choose (diesel) engine power you are only offered 150 or 256 - which suggests there may be loads of used 190's sitting around waiting for us caravanners but we don't know about 'em 'cos they're not on the web site!

The 190ps not bhp diesel is still available, along with the 240ps and 150ps.
1.4 petrol has been replaced with a 1.5, and the 180ps petrol will shortly be 190ps instead.
PC has done a tow test on the 180ps petrol .
