Meltom Mowbray pork pies have PGi status so can only be made in the Melton Mowbray area.
The really are simple:
Hot water crust pastry
Chopped pork (not ham and not minced!), shoulder is fine, seasoned with salt & pepper.
Pork stock and gelatine to make the jelly.
Make your case, idealy hand raised round a dolly or jam jar
fill with the pork,
top and crimp,
bake (about 2hrs at 180c), remove from oven and cool,
make two holes in the top pour in the freshly made jelly and refrigerate
