I Would not worry about the West coast route. The roads are narrow in places but there are plenty of passing places and the locals know the problems and drive accordingly. You do have to accept that your average speed will be far slower though but the midges are probably more of a concern than the roads.

Tell the Boss this is a three week tour of some of the most spectacular and remote scenery.
The late Queen Mother's home at Castle of Mey looking over the Pentland Firth near Thurso is a must. Move along the top in a Westerly direction towards Cape Wrath. Dropping down to Scourie, Sutherland. Handa Island is nearby.See hundreds of Puffins. Stay a night at so at Scourie caravan park perched on a high cliff with spectacular sunsets.
Go South and just before Ullapool turn off for the Summer Isles.

I see no point in dragging the caravan to Applecross. Better to pitch near Loch Carron and take the Pass of the Cattle scenic route . Fine seafood dining at Applecross Hotel.
