Can somebody tell me what this means and what is the heaviest weight I could tow with it?

Unbraked towing weight 750kg

Braked Towing weight 1600kg

The weight of the car is 1560kg so the max laden weight of my new van being 1100kg should be now problem but I was confused as to what the other figures meant?

Unbraked owing weight means just what it says. It is the maximum weight that one may tow if the trailer is not fitted with an overrun brake. However, as all caravans today have brakes, the 1600kg limit will apply.
