Easy family meals to cook when caravanning...

I'm off for 2 weeks next week and need to plan my meals as its obviously too expensive to eat out all the time. Cooking isn't my favourite hobby and being on hols I want to spend as least possible time yet it being easy, cheap and tasty!

Thought it might be good to share some ideas on here... anyone got any?!

If you are near a Morrisons , Tesco etc they do freshly spit raosted chickens very cheap. I've seen two for a fiver towards the end of the day.
Vegetables and rice or bread should go well!

A pasta bake with garlic bread is a nice easy meal to prepare quite quickly.

Being no domestic goddess, I am in favour of anything that comes in a packet or a jar. When in the van, I use a jar of curry sauce and some chicken pieces; or jar of chilli sauce over mince or good old Dolmio (or tesco equivalent) over pasta. Bit of rice/bread. Job done and not that many saucepans for washing up. Banana or apple for pudding to ward off scurvy.
What can I say, cooking is one of the many things that I am not good at. (although there are many other things at which I am great

I hereby confess to using "instant" everything whenever possible.eg:- mash,gravy,tinned veg,reduced prepacked curries,lasange,cottage pies and all varieties of frozen chips,wedges,hash browns.May the great God Jamie Oliver forgive me.But I am on my holidays you know. No thats not true I still use them at home I am just not interested in cooking any more.So there!!!!

Personally, I don't think you can beat a good old cheese and onion sandwich on really thick gooey asda Tiger bread.

However, what about stir fries? The most time consuming thing is chopping the vegetables, (or you could buy a bag of frozen), put any vegetables in, peppers, chillies, peas, sliced carrots, sliced mushrooms, sweetcorn, sliced green beans. Add a tiny bit of olive oil, stir fry, add a packet of Blue Dragon stir fry sauce (they do all different types), then add some Amoy straight to wok rice noodles (or just noodles), keep stirring. Job done.

Bombay potatoes, again the hardest part is preparing the potatoes, Packet of Schwartz bombay potatoes mix. You'll then need potatoes, some oil, an onion, 4tbs water, 400g tin chopped tomatores. Follow instructions. Delicious, however, the cooking smell will linger for quite some time. I cook it in the awning now on one of those 2 ring gas stoves.

Pizza and garlic bread.
You can't go wrong with pasta and some sort of sauce

I found this which sounds nice I think we'll try it:

For a quick and tasty lunch idea fill a couple of flat mushrooms with grated cheese mixed with Branston Smooth Pickle and a beaten egg, grill until the topping is bubbling and golden and serve with a crisp green salad.Serves 2What you need
  • 2 large flat mushrooms, washed and stalk removed
  • 50g cheddar cheese, grated
  • 2 tablespoons of Branston Smooth Pickle
  • 1 small egg, beaten
How to make it
  1. Place the mushrooms onto a grill pan stalk side up.
  2. In a bowl mix together the cheese, Branston Smooth Pickle and egg.
  3. Divide the cheese mixture evenly between the mushrooms and press down lightly.
  4. Place under a moderate grill and cook for 10 minutes or until the mushroom is cooked through and the cheese mixture is bubbling and golden.
Hints and tips
  • Serve with a crisp green salad and a tomato salsa.
  • Don’t waste the mushroom stalk, chop it up and add it to the cheese mixture.

Colin, you are my kinda guy.!!! Mind you it could work out a bit pricey if you have a some kiddies to cater for.
I do so admire those who can cobble together a healthy,tasty and economical repast.I used to be able to do it but alas no longer. Oh well, I do like the "ping" of the microwave when I have nuked another culinary masterpiece.
Perhaps there is a cook book available specifically designed for caravan catering.

If you are OK with mushrooms then mushroom fried rice is lovely and filling and can be had with any meat or not if you can do non meat days.
Pre cooked boiled rice (cook the day before you set off place in a sealed tub and chill) chop white and chestnut mushrooms into quarters and add 2 tablespoons of good olive oil into a wok or good frying pan, start mushrooms off and when soft cooked add another spoon of olive oil and turn heat up high, add rice and keep moving it round till all coated and hot right through, add salt and ground black pepper and soy sauce to your liking.
Serve with anything you fancy, goes especially well with steak, sausage etc

A good chicken soup/stew is also good and can be precooked the day before or sooner and frozen, dumplings can be made as well and kept chilled till you want to cook them.
Remember that a dish of say bolongnaise sauce frozen will take 3/4 days to defrost in a fridge.

No matter what you take or cook so long as you enjoy your holiday that's all needed.

Simples, we have started taking the crockpot. Chuck a load of raw in it in the morning. Leave running in the awning and come back from the beach to find dinner is ready. Bit of meat, spuds, onions, gravy mix et al and you have a passable quick dish. Or a curry sauce and anything you want to throw in.

As somebody referred to Can't Cook, Won't Cook, there is a third option in my case. Shouldn't Cook, yet the crock works for me. B)
