My guide lists the following campsites which are open all year:

These might help. Just north of Madrid exit N1/E5 junct 60, La Cabrera, Camping de la Miel.
Another just south at Aranjuez,Camping Soto del Castillo. Exit N1V onto m305 into Aranjuez and follow capsite signs.
There is one at Arganda, but does not sound too good in the caravan Europe book, but it is off junct 22 on the N111/e901 Campo Real.
The first two are ok for night halts, as I have used both, and I will be useing La Cabrera late November this year. All the best.
