May be forced to take holiday in July or August this year. Having only been in September, is it necessary to book or can you just chance it, as one does in the 'off' season.

Any thoughts?

I would suggest that you definitely book especially for August. You may find that a lot of the more popular sites in coastal locations are already full!
 
Yes in July / August and particularly near the coast, you will need to book.

Other times of the year we never do.
